With WEST Certified Kristen Valenza, Living Roots Food 831 In this hands on cookng class, Kristen will show you how to make homemade Italian manicotti, stuffed with ricotta cheese and mushrooms, as well as a traditional marinara sauce from scratch. This delightful dinner will be paired with an Italian wine. Manicotti means "little shirtsleeve" in Italian, and refers to the pasta noodle shell. It also means "cooked hands" (mani = hands, cotti = cooked), referring to hands being burnt when making the crepes traditionally used to create this dish. This class will implement the traditional version of the manicotti recipe by using crepes instead of pasta tubes to contain the filling. About the Instructor: Kristen grew up in New Jersey where she began cooking with her family at a young age, learning the roots of Italian and Mediterranean cooking. Kristen found a passion for traveling and experiencing other cultures through food, wine, and good company. She brought her expertise to Santa Cruz, where she teaches cooking classes and offers high quality catering through her businessĀ Living Roots Food 831.
